Red Lentil & Tomato Soup

Red Lentil & Tomato Soup

1 tbls oil (I use olive or canola)
1 onion
1-2 cloves garlic
1 tsp Italian Herbs
1 large or 2 small carrots, peeled and diced small
1 zuchini, diced small
1 cup red lentils
1 litre stock (I use powder and water)
440g can chopped tomatoes

Heat oil in pot, fry onion and garlic for a few minutes. Add remaining ingredients, bring to boil and simmer 10-15 mins till lentils and veggies are soft. Nice served with crunchy sourdough, a spoon of pesto and grinding of black pepper.
